1. Corn

Corn is the quintessential summer veggie – and it’s even better cooked on the grill. The summer street fair staple is surprisingly simple to make. If you shuck the corn first, cooking it naked on the grill, you will get that mouthwatering charred flavor you wouldn’t get with the husks still on. Let the corn sit over the fire while turning occasionally until it’s charred on all sides. Finish it off by rolling it in butter and sprinkling on some sea salt – and voila! You just grilled your corn to perfection.

2. Zucchini

You may not see a zucchini stand at the street fair, but it’s debatably equally as delicious as corn – it’s the vegetable of summer. Take advantage while zucchini is in full bloom, throw it on the grill and it will unleash its natural sweetness. To grill zucchini like a pro, squeeze a little lemon juice on it first and cook it until it’s crispy. You won’t regret it, we promise.

All mushrooms are not created equally and portobello mushrooms happen to be the best for grilling. They are packed with flavor, easy to marinate and won’t fall apart while you grill them. Pro tip: you can even use portobello mushrooms as a burger substitute for a deliciously filling meatless option.

4. Onions

The thought of grilling onions might sound overwhelming. After all, there so many different types to pick from. You can’t really go wrong with your decision, as long as you master the grilling. For the perfect addition to a kabob or skewer, cook the onions low and slow or else the outside will burn and the inside will remain raw. You will know your onions are flawlessly finished when they are golden and tender.

5. Bell Peppers

Grilled bell peppers may just be the easiest side dish to whip up for that summer BBQ. Cut each pepper so that there are no stems or seeds, coat with olive oil and seasoning and throw them on the grill at medium heat for about five minutes until they are soft or slightly charred. Yes, it’s really that easy.

6. Broccolini

If you’re grilling regular old broccoli, you’re missing out. First of all, broccolini is flatter and therefore easier to grill. All you have to do is coat the greens in olive oil, add the spices of your choice and grill into their color deepens. It’s important to place them perpendicular on the grill so that they don’t get lost in the coals.

7. Asparagus

Asparagus is a great vegetable to throw on the grill for a fast and easy side dish. But first, it’s important to determine the best grilling method and spear size, too. Opt for thicker asparagus spears, cover them in butter (instead of oil) for a crispier finish and then cook them over a simple medium-hot fire for about ten minutes. Make sure you turn the asparagus sideways so the stalks don’t fall through the grill slots.  You have to keep your eyes on those bad boys or else you will lose them.
