1. Palak (Spinach) Corn Curry
Spinach corn curry recipe is almost similar to that of palak paneer curry (spinach cottage cheese curry), with few small changes here and there. It's yet another beautiful way of eating spinach which is loaded with nutrients. I have cooked this recipe today for lunch to go with phulkas, though I just love to have it with butter naan ?? . So this is how I make it: Blanch and puree spinach leaves, keep it aside. Heat oil in a kadai, add cumin seeds,bay leaf and clove to it. Add pureed onions to this and saute till golden. Add ginger garlic paste and cook till raw smell goes away. Now, add tomato puree and saute on medium flame till oil releases from sides of paste. Add spinach puree, some salt and cook till all the water is almost evaporated. Add on the spices like red chilli powder, turmeric powder, coriander powder, garam masala powder and mix well. Cook for another minute. Pour some water to get desired gravy consistency and bring it to boil. Add boiled sweet corn kernels and let it simmer on low flame for a min followed by addition of cream. Quiche baby! ? Do you ever feel a little intimidated when making quiche? Or not so much. . My #LifeAbundant . . I can't get enough of a good quiche. Spinach is my favorite. Today we are doing crustless spinach quiche to demonstrate how easy you can make a fancy Sunday brunch at home today. Recipe below. . . KP's Crustless Spinach Quiche ? . Ingredients 1 tbsp butter 1 cup red onion, diced good 2 red scallions 2 cloves garlic 10 eggs 1 cup heavy cream 1 tsp salt 1 tsp Cracked pepper to taste 1/8 tsp cayenne pepper for spice ½ cup feta cheese 1 6 0z bag baby spinach Instructions 1. Preheat oven 350 degrees. 2. Chop red onion, bottom stalk of red scallions and garlic. 3. Melt the butter in a sautee pan. Add onion and scallion and sautee until soft. Season with a good pinch of salt and pepper. 4. Add garlic. 5. And spinach and cook until wilted and reduced in size to about 1 cup. 6. Set spinach mixture aside. 7. Crack 10 eggs in a large bowl, whisk together, add the heavy cream and whisk. Then add salt, pepper and cayenne. Whisk to combine. 8. Remove spinach mixture from the pan and give it a rough chop, add to the egg mixture. 9. Add the cheese and mix 10. Pour mixture in 8 inch round deep dish. 11. Place in a 350 degree F oven for 45-50 mins or until golden brown and firm. No wiggling in middle. 12. So everybody shud include this in their diet Here is the recipe ? Spinach Soup / Palak Soup (1 cup = 250gm) 1. Spinach – 4 cups (tightly packed) 2. Unsalted butter – 2 tbsp 3. Onion – 1 medium sized (finely chopped) 4. Crushed pepper – 2 tsp 5. Vegetable stock – 4.5 cups 6. Fresh cream – 2 tbsp 7. Salt Procedure * Wash the spinach leaves thoroughly with water, roughly chop them and keep it aside. * Heat the butter in a pot and add finely chopped onion. * Once the onions are translucent, add some crushed pepper. * Then add the chopped spinach leaves and sauté till they wilt. * Add some salt and a cup of vegetable stock and cook the spinach well until it is completely cooked. * Turn off the heat and let the mixture cool completely. * Then blend the mixture into a fine paste. * On low heat cook the ground paste with the rest of the vegetable stock and some more salt & crushed pepper(if needed) * Then turn off the heat and add some fresh cream. * Serve hot with extra cream. Note : You can add more or less crushed pepper depending on how spicy you like. Make sure you buy a no sodium vegetable stock so that you can control the salt.
