These Gluten-Free Cookies Are The Perfect Crispy Snack For Your Next Road Trip
We’re always on the lookout for a gluten-free snack that’s legitimately good. And that’s why we’re into these cashew snacks called Coco-Thins. These cookies are paper-thin with a crunchy and crumbly texture. Unlike a lot of gluten-free snacks out there, we can actually understand the ingredients.
Coco-Thins come in flavors like vanilla, chocolate, lemon zest and salted caramel. Each flavor is made with six ingredients ranging from organic coconut to organic coconut sugar to cashews to cassava flour. The cookies are also certified paleo and vegan. They’re made with gluten-and-grain-free cassava flour, a powder made from a root vegetable that’s popular in South American and African cuisine.
Our favorite flavors are the salted caramel and the chocolate. While these cookies are on the thin side, there’s a ton of flavor packed in. They’re perfect when you need something crunchy and sweet, but you want to avoid a snack coma.
You could snack on these cookies on their own or crumble the Coco-Thins up and sprinkle them on top of your favorite desserts or even use them as a gluten-free pie crust. These cashew cookies are available nationwide and retail for around $5 a bag.
