This Italian Egg Scramble Makes Breakfast The Most Exciting Meal Of The Day
Are you a breakfast person or a dinner person? While we’re sure there are some lunch people out there (and we’re well aware of the brunch people), we have a recipe that could very well convert you into a longtime breakfast lover. Our Italian egg scramble recipe uses just a few simple ingredients, takes five minutes to make and is so flavorful, you won’t believe eggs can even taste that good. Bonus: We made this recipe for one person, so all you need to do if you’ve got company is multiply the measurements by how many people you’ve got. Now scram(ble) and make the best breakfast ever.
Italian Egg Scramble For One
- 1 tablespoon of olive oil
- 5 to 6 cherry tomatoes, cut into quarters
- 1 big handful of spinach, chopped into ribbons
- Pinch of salt, black pepper, red pepper flakes, Italian seasoning and garlic, to taste
- 2 eggs, beaten
- Parmesan to taste
Heat a sauté pan or skillet to medium-high heat and add oil. Then, add cherry tomatoes and cook for three minutes, then add spinach. Cook, stirring frequently, until the spinach softens, then add the spices. Cook for another minute, then add the eggs. Scramble to your preferred texture, then top with Parmesan and enjoy!
