Italian Egg Scramble For One

Ingredients

  •  1 tablespoon of olive oil
  • 5 to 6 cherry tomatoes, cut into quarters
  • 1 big handful of spinach, chopped into ribbons
  • Pinch of salt, black pepper, red pepper flakes, Italian seasoning and garlic, to taste
  • 2 eggs, beaten
  • Parmesan to taste

Instructions

Heat a sauté pan or skillet to medium-high heat and add oil. Then, add cherry tomatoes and cook for three minutes, then add spinach. Cook, stirring frequently, until the spinach softens, then add the spices. Cook for another minute, then add the eggs. Scramble to your preferred texture, then top with Parmesan and enjoy!
