These Baked Chicken Nuggets And Sweet Potato Fries Throw It Back To Your Childhood Days
While our palettes become more refined as we age, we can’t resist a good childhood favorite. For some, it’s that perfect PB&J, and for others, it’s a heaping bowl of mac ‘n’ cheese. But for us, it always comes back to chicken nuggets and fries. We lightened up the classic duo by making both from scratch, of course, and baking them instead of frying them. If you’re having a terrible day or you just need some extra TLC in your life, this baked chicken nuggets and sweet potato fries recipe has your back.
Baked Chicken Nuggets And Sweet Potato Fries
Ingredients
- Two sweet potatoes, cut into long strips about 1/4 inch wide
- 1 tablespoon of olive oil
- 1 pound of ground chicken
- 1 cup of seasoned breadcrumbs
- 1 teaspoon of cayenne, divided
- 3 teaspoons of garlic powder, divided
- Salt, to taste
- Pepper, to taste
- Optional: hot honey (3 tablespoons of your honey of choice mixed with 1/4 teaspoon of cayenne)
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line two baking sheets with aluminum foil. On the first baking sheet, add the sweet potato fries and 1 tablespoon of olive oil. (No seasoning yet — we want these babies to get nice and crispy before adding any spices!) Make sure every fry is coated in olive oil, spread them out evenly on the baking sheet and pop them in the oven. Set a timer for 30 minutes and flip the fries once you’re down to 15 minutes.
Meanwhile, in a small bowl, add your breadcrumbs, 1/2 teaspoon of cayenne, 1 teaspoon of garlic powder, a pinch of salt and a pinch of pepper, and mix. In a larger bowl, mix the ground chicken with 1/2 teaspoon of cayenne, 1 teaspoon of garlic powder, a pinch of salt and a pinch of pepper. Mix together, then form the chicken into small, flat-ish chicken nuggets. Toss them into the breadcrumb mix, turning them over to make sure all sides are coated, and then add them to the baking sheet. Place the nuggets into the oven on a separate rack, and take out the sweet potato fries. Flip the fries, then return them to the oven. Once the last 15 minutes are up, your meal is done!
Serve with your favorite sauce. (Ours is hot honey.)
