Sweet potatoes aren’t just for your grain bowls and Thanksgiving dinner tables. When it comes to dessert, sweet potatoes are a great way to make your favorite treats vegan. You don’t need oil or butter to make your brownies chewy when you add mashed sweet potatoes to the mix.

If you’re more of a savory person than a sweet person, these sweet potato brownies are right up your alley. You’d be surprised how well chocolate and cocoa powder work with sweet potatoes. When you have a few extra potatoes lying around and you want to use them up before they get weird, make these brownies your go-to.

5-Ingredient Sweet Potato Brownies

Ingredients

  • 3 medium sweet potatoes (cooked and mashed with skins removed)
  • 1/4 cup cocoa powder
  • 1/2 cup cashew butter or almond butter
  • 3 Tbsp. maple syrup
  • 1/2 cup raw almonds, finely chopped

Instructions

Preheat your oven to 350 degrees Fahrenheit. In a saucepan, heat up the nut butter with the maple syrup until the nut butter becomes a slightly more liquidy consistency.

Mix together the mashed sweet potato, nut butter, maple, cocoa powder and chopped almonds. Combine everything in a medium bowl and pour the mixture into a greased baking dish. Bake the brownies for about 18 to 20 minutes or until you think they’re cooked through.

Once you take the sweet potato brownies out of the oven, let them cool completely. Pop them in the fridge until you’re ready to eat them. You can expect a slightly more gooey consistency than your average brownies, but they’ll be all kinds of indulgent.
