These Chinese Crepes Are The Best Breakfast Street Food You’ve Never Heard Of
When we think of crepes, we usually think of the delicate French kind, stuffed with strawberries and chocolate or ham and cheese. One of China’s most popular breakfast street foods, jianbing, is like a savory French crepe turned up 10 notches. It’s made with a batter of wheat and mung bean flour, eggs and a variety of different sauces.
The toppings of jianbing are the best part. While the crepe is cooking, there’s an egg scrambled and spread on top, along with showers of cilantro, scallions and sesame seeds. You’ll often find these crepes covered with sweet bean paste, thick hoisin sauce and chili sauce.
Sometimes you’ll see finely chopped mustard pickles, coriander and crispy-fried wontons in there. Jianbing is folded over itself in a rectangle shape, so you can eat it just like a sandwich.
There are a bunch of restaurants and food stalls that offer this Shanghai-inspired street food in the United States, like Jian Bing Man, Mr-Bing and Jianbing Company in New York City. There’s also more of an upscale jianbing spot in California called Tai Chi Jianbing.
You can make these savory crepes as elaborate or minimal as you want. Either way, they make the best on-the-go food for any meal of the day.
