The Rice Noodles In This Salad Are So Magical That They Change Colors

When it comes to colorful foods, we rarely shy away.  So you can imagine that we immediately fell in love when we found this colorful rice noodle salad. McCarren Hotel & Pool’s newest Thai restaurant Thaimee is now serving yum wood sen, which means “magic noodle salad.” What makes it so magical is that the rice noodles actually change color as you eat them.

SecretNYC reports that Chef Hong Thaimee creates the vibrant blue hue in the cold noodles by soaking them in water with butterfly pea flowers. The restaurant’s noodles turn from bright blue to purple once lime juice is squeezed over them. Apparently, the acidity creates a chemical reaction that is too pretty to be true.

If you ever hit up the restaurant, you’ll also notice that Thaimee includes other colorful items on its menu like blue dumplings, which are also soaked in water with butterfly pea flowers.
