05/19/19 Newsletter: Yes, You Can Say No
We’ve all been there — feeling overworked, overstimulated, overwhelmed and in serious need of some personal space. And yet, there is the feeling of guilt that causes us to continue opting into all of the things happening around us, even if we just want to say “no” and chill out by ourselves. You know how it goes, “I can’t miss Sunday brunch with the girls… I promised that old friend of mine we’d meet up for happy hour after work on Wednesday… I really want to stay in this Friday but my partner planned a big bar night for our crew…” we get it. But listen up: You’re entitled to your own choices — even if that means telling people that you’ll have to join them next time and you should never feel guilty for taking care of yourself. Here’s how to grow more confident in putting yourself before others. [Swirled]

A toaster oven (not the two-slot toaster) can be used for so much more than toast or heating up leftover pizza — we’re talking about real meals. How about cheesy quesadillas or a frittata for two. Don’t want to heat up the entire oven if you’re craving a piece of broiled salmon? It comes out amazing and faster using the toaster oven method. [Swirled]
Recipe of the Day: The classic combo of rhubarb and strawberries make an incredible dessert with minimal fuss. Macerate (add sugar and let sit) the rhubarb and strawberries in separate bowls until the juices release. Drain and transfer the rhubarb to the strawberry bowl and add cornstarch, lemon juice and vanilla. Discard the rhubarb juice. Sprinkle the topping — a mix of flour, oatmeal, sugar and butter — on top and bake the whole thing in the oven for about an hour. Best when served with a scoop of vanilla ice cream. [Food & Wine]
A tip from yours truly: Do not eat the leaves of rhubarb — they’re poisonous. Only the stalks, the part that looks like red celery, are edible.
