This Wellness Soup Will Keep You Cozy And Healthy All Winter Long

We’re heading into that time of year — yes, the time of festiveness and big family meals and presents, but also the time of illness. You can get the flu shot and keep hand sanitizer ready, but it’s just as important (if not more so) to keep your body properly nourished. Luckily, we have a soup recipe that will not only keep you healthy all season long but also taste awesome and take less than 30 minutes to make. What’s better than that? Oh, a soup that requires very few steps. And we’ve got you covered here, too. It’s basically SOUP-erman.

We swear that this soup will warm your body and soul from the inside out. Just throw everything into the pot after work and have a hot, steaming bowl of goodness awaiting you in a half hour. Sounds like heaven to us.

The Wellness Soup That Will Cure All Woes — Serves 6-8

Ingredients

  • 1 pound of boneless, skinless chicken, cut into cubes
  • 6 cups unsalted chicken stock (or vegetable stock)
  • 1  cup carrots, diced
  • 1/2 cup celery, diced
  • 1 yellow onion, diced
  • A handful of kale (or greens of your choice)
  • 1 cup egg noodles (or noodles of your choice)
  • 2 tsp. turmeric
  • 1 tsp. ginger
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 Tbsp. fresh minced garlic
  • 1 tsp. thyme
  • 1 tsp. parsley
  • Juice of one lemon

Instructions

Heat a large soup pot on medium-high heat. Add all of your ingredients at once (yes, all of them), stir and cover. Let the soup come to a boil, and then turn the heat down to low and simmer the soup for 30 minutes, or until the vegetables are tender. Enjoy immediately, throw in the fridge for later or freeze for especially chilly days.
