Recipe Of The Day: Switch up your classic ham and cheese sandwich for a panini filled with prosciutto, fontina and in-season nectarines. The fruit and prosciutto are a dynamic duo that packs a punch and the sandwich is ready in about 10 minutes. Start by grilling nectarine slices in a panini press while buttering one side of the sliced focaccia. On the unbuttered side, layer your fontina, prosciutto, and cooled nectarines before pressing for two to three minutes, or until the cheese is melted. A tip from yours truly: If you don’t have a panini press, use a cast iron pan and sandwich the top with another heavy pan, flipping halfway through cooking time.
