Brie cheese is always a good idea. It’ll be there for you through thick and thin whether it’s schmeared on a French baguette, baked in phyllo dough, roasted with vegetables or melted in a buttery grilled cheese. It’s like that chill friend you can take just about anywhere.

When you’re shopping for a good brie, the gooey ones are usually the mildest. The type that you find at regular grocery stores is a cow’s milk cheese that’s creamy, buttery and mild with an edible firm white exterior.

True French brie, unlike the kind you’ll find in most American grocery stores, is made with raw milk curds, placed by hand into molds and then aged. The real French version has a more intense and funky smell compared to the mild kind. Mild brie is perfect for cooking since it won’t overpower the other spices and flavors in the dish. Brie goes well with slightly acidic fruits like blueberries, cherries, strawberries and apricots. Make a grilled cheese with melted brie, blueberry compote (blueberries cooked in a sugar syrup) and a brioche bun. You’re never going back.

2. Roasted Asparagus With Baked Brie

Asparagus is recognized for its distinct taste. When it’s fresh, the flavor is mild and earthy, but when it’s overcooked sometimes it can taste a little bitter or sour. Asparagus goes great with mild cow milk cheeses and baking brie on top is a prime example. Finish it with some coarse sea salt, extra virgin olive oil and fresh black pepper.
