Meal Prepology: How To Make Four Dishes From Turkey, Cauliflower And Peppers

By now, you know that we’re meal prep fanatics. And we’re back with a new set of recipes to try if you happen to be a fan of ground turkey, cauliflower and peppers.

By picking up a few ingredients from the store as well as another few complementary ingredients, you can create four completely different one-serving meals. No more meal prepping a huge pan of food that you’ll inevitably be eating all week long. If you’re interested in spicing up your mealtime, we’ve got you.

Prep Time!

What you need:

  • 1 pound ground turkey
  • One large head of cauliflower, riced, or a bag of riced cauliflower
  • 4 bell peppers, in any color you desire (we chose green, yellow, orange and red)

Keep all ingredients as-is, since you’ll be transforming them dramatically for each dish.

Meal #1: Turkey Bolognese

Extra Ingredients: Crushed tomatoes, onion, pasta of choice, basil (optional), Parmesan cheese (optional)

Fill a medium-sized pot with water, and then heat it until it’s boiling. Add 1/2 cup of dry pasta and cook it until it’s al dente (we used farfalle, and it took about 12 minutes).

In the meantime, cook 1/4 pound of the ground turkey, half an onion, a pinch of salt, a pinch of pepper and a teaspoon of olive oil in a medium skillet on medium-high heat. Once the turkey is no longer pink, add a small can of crushed tomatoes and optional basil, and simmer the mixture until the pasta is done. Drain the pasta, and then add it to a bowl and top with the bolognese and optional Parmesan cheese.

Meal #2: Curry Turkey Meatballs With Peppers And Cauliflower Rice

Extra Ingredients: Red curry sauce, curry paste (optional), garlic (optional), ginger (optional)

In a small sauce pot on medium heat, add about 1 cup of riced cauliflower and season it with salt and pepper. Stir it frequently until the cauliflower is cooked but not mushy.

Meanwhile, add 1/4 pound of ground turkey to a bowl with optional curry paste, garlic and/or ginger (if you want to skimp on the flavors for the meatballs, you’ll get enough with the red curry sauce). Mix until it’s well-combined, and then form it into balls. In a large sauté pan, add a tablespoon of olive oil, and then add the meatballs, turning them frequently until all sides are golden brown. Chop and add two peppers, and cook the mixture for another five minutes. Then add the red curry sauce and simmer it for another five minutes. Serve the seasoned meatballs on top of the cauliflower rice, and enjoy!

Meal #3: Turkey Sliders With Mashed Cauliflower

Extra IngredientsMilk of choice, butter or olive oil, cheese of choice, garlic (optional)

In a small bowl, mix 1/4 pound of ground turkey, a pinch of salt, a pinch of pepper and optional garlic until fully incorporated. Form the mixture into small patties and cook them on medium-high heat in a skillet greased with olive oil. In the meantime, cook 1 cup of riced cauliflower on medium heat in a saucepan with 1/4 cup of your milk of choice and butter or olive oil until the cauliflower is able to be mashed with a fork. Add cheese to taste, and then top it with more pepper.

Meal #4: Loaded Burrito Bowl

Extra IngredientsSalsa, onion, taco seasoning, black beans, desired toppings

In a small saucepan on medium heat, cook 1 cup of riced cauliflower with a teaspoon of olive oil and a teaspoon of salsa until the rice is cooked but not mushy.

Meanwhile, dice two peppers and vertically slice the other half of your onion. Add them to a skillet greased with olive oil and cook them for a minute or two. Then, add your last 1/4 pound of ground turkey and cook, breaking up the turkey into bite-size pieces, until no longer pink. Add 1/2 cup of salsa and the rest of the taco seasoning, and simmer the mixture until the peppers and onion are soft. Top the cauliflower rice with the turkey mixture, add 1/2 cup of black beans on the side and any other toppings you desire.
