Thai Peanut Chicken Salad (one serving)

Ingredients

  • 1/2 cup cooked chicken
  • 2 big handfuls spinach
  • 1/2 cup broccoli florets
  • 1/2 cup snap peas
  • Half a small red onion, cut into slices
  • Half an avocado, cubed
  • 1/4 cup cilantro
  • 1 Tbsp. olive oil
  • 2 tsp. soy sauce
  • 1 tsp. peanut butter
  • Juice from half a lime
  • 1 tsp. honey
  • 1/2 tsp. minced garlic

Instructions

In a bowl or Tupperware container, add chicken, spinach, broccoli florets, snap peas, red onion, cubed avocado and cilantro.

In a smaller bowl, whisk together olive oil, soy sauce, peanut butter, lime juice, honey and garlic. Pack separately from salad if you’re bringing it for lunch, or if you’re eating it immediately, toss with the salad ingredients and enjoy!
