At Seaborne, A Petraske Protégé Sets The Standard In Red Hook

- Seaborne in Red Hook, Brooklyn, is a bar concept from the late Sasha Petraske, the cocktail innovator behind Milk & Honey, Dutch Kills, and many other speakeasy-style bars. Petraske’s partners opened Seaborne in January 2016, just a few months before his sudden death in 2015
- To save money on labor, Petraske made sure that each booth had its own water faucet and a supply of napkins, so that the bartender only has to focus on serving drinks. The bar is designed so that ideally, a single bartender can handle a shift by themselves
- Like many of Petraske’s other bars, Seaborne is not marked in any way outside. Unlike his other bars, Seaborne serves a selection of frozen drinks, made from two ice cream machines Petraske had installed

Bar director Lucinda Sterling chose the name Seaborne from William Butler Yeats poem. “It was about a bird,” Sterling told The New York Times. “Toward the end of the poem, the bird is seaborne, meaning balanced in the air. And I thought, that’s perfect. It’s relevant to Red Hook, which is near the water. Also, it’s a bird, still. And balance is something Sasha also thought about: balanced cocktails.”
