Potatoes Are The Ultimate Surprise Superfood

Potatoes have gotten the worst rap lately and have been shamed by dieters and nutritionists alike. Often called fattening or too starchy, they’re treated as a second-hand vegetable at the table compared to kale and roasted Brussels sprouts. The truth is that potatoes not only have vitamins and minerals, but they can nourish your body better than some other popular superfoods like bananas, avocados and broccoli. The potato superfood status is clear: they qualify.

A recent study highlighted by Daily Mail shows that jacket potatoes have five and a half times more fiber than a banana and three times more Vitamin C than three avocados. Wow.

Another study conducted by Sigrid Gibson on behalf of the Potato Council proved that potatoes also have more of the mineral selenium, which benefits heart health, than a day’s worth of nuts and seeds. So basically, science is telling us that we’ve shunned potatoes for essentially no reason.

One reminder when digging back into potatoes: a baked potato does not equal a loaded baked potato. Leave excess butter, salt, sour cream and bacon off the spuds. Roast them with chicken, mash them or sautée them in a little olive oil, and whatever you do, remember to keep the skins on (the skins account for 40 percent of the nutrients!).
