The weather is getting colder and colder, and yet the Prosecco craze still lives on. No, we may not be able to enjoy it chilled on rooftop bars or frozen in the form of popsicles (what kind of person eats a popsicle in November?!), but you can eat it in the form of cheese. Yes, it’s happening. Welcome pink Prosecco cheese.

Delish reports that the cheese, which is made by The Great British Cheese Company, is an attempt to appeal to millennials, and it’s working. While at first glance the cheese looks more like cheesecake, it’s a type of Wensleydale cheese, which traditionally tastes fresh and mild.

The company infused raspberry and Prosecco into the cheese, creating something no other company has been able to develop. “Crumbly but milky Wensleydale, sweetness from raspberries and the acidity from Prosecco produces a creamy but sweet raspberry flavored cheese, with the Prosecco acidity cutting through your palette as you taste the cheese,” according to the cheese company’s website.

You can buy 200g of the cheese on the company’s website for £4.50, or $5.90, or if Prosecco isn’t your thing, check out the company’s other strange flavors of the waxed cheese truckles like Sticky Toffee Tastic or Chili and Lime Cheddar.
