Olmsted Is A Gorgeous Garden Restaurant From A Blue Hill Alum

[tw-divider]The Scoop[/tw-divider]

  • Like Noma and Blue Hill, Olmsted is committed to growing at least some of its own ingredients. Greg Baxtrom enlisted his friend, horticulturist Ian Rothman, to design a backyard garden where the duo grows things like figs, garlic, and root vegetables
  • The most expensive thing on the menu is $24, and that’s a roasted guinea hen with ramps and morels. Because Olmsted and Rothman wanted to create a restaurant that’s accessible to the neighborhood, each menu item is created with an eye toward keeping the prices fair and reasonable
  • The restaurant itself has tables for 50 guests plus a chef’s counter, but you can also head to the garden to enjoy dishes like the dry-rubbed scallops with green garlic, watermelon sushi, and garden radish top gazpacho

Chef Greg Baxtrom’s hyper-seasonal culinary approach comes from having worked at some of the most acclaimed restaurants in the world, including Blue Hill at Stone Barns, Per Se, and Alinea
