Ingredients:

16 oz. Cavatappi
8 oz. Mac cream
1 1/4 lb Lobster meat, cooked
2 oz. Cheese mix (swiss, parmesan, mozzarella)
3 oz. Breadcrumbs

Mac Cream:

2 cups Heavy Cream
2 cups Milk
4 cups Lobster stock
Roux*
16 oz. Swiss cheese
16 oz. Cheddar cheese
1 cup Parmesan

*Roux:

6 Tbsp Butter
6 Tbsp Flour

To Prepare Roux: Heat butter over medium-high heat. Add flour and mix vigorously. When mixture thins and starts to bubble, reduce heat to low and slow whisking. Cook until you can smell a toasty aroma, then cook 2 minutes more, stirring occasionally.

To Prepare Mac Cream: Bring the heavy cream, milk and lobster stock to a boil. Once boiling add the roux and mix. Remove from the heat and add the cheese. Let cool.

Method:

Cook the pasta for 12 minutes and strain. Roughly chop the lobster meat and add to cooked pasta along with the mac cream. Top with cheese mixture and bread crumbs and finish in a 350° oven for 15 minutes until lightly brown and bubbling.
