If you only have a single afternoon to spare in Singapore, it better be spent eating this glorious street food.

Chan Hon Meng, the world’s first Michelin-starred street chef, runs his street food stall in one of Singapore’s largest open-air food courts. And his Soya Sauce Chicken Rice, which you can snag for just $3.80, is out of this world.

The humble chef has been refining this chicken and rice dish for years. It’s simple, but it takes five to six hours to prepare. Meng values using high-quality ingredients to develop the rich flavors of his chicken, which is slowly braised at a precise temperature with a mix of Chinese herbs and spices.

The chicken has a dark skin and slight crispiness on the outside while it’s all kinds of tender and juicy on the inside. The rice gets coated with a slow-cooked red sauce that’s the perfect balance of sweet and tangy.

The success of this street food is actually the reason Meng was able to turn his little chicken and rice stall into a casual, quick-service joint called Liao Fan Hawker Chan.  The restaurant seats 80 diners, includes a take-out service and still offers the cheapest Michelin-starred meal you can find.
