Clear Pumpkin Pie Exists And We’re Pleasantly Baffled

When it comes to pumpkin pie, we can destroy a slice in no time. It’s getting to that point in the year when pumpkin pie is everywhere, and though we love the classic, we’re open to new interpretations. One restaurant’s twist on the popular fall dessert far exceeds our expectations. It made clear pumpkin pie, and we are definitely intrigued.

Simon Davies, Chef de Cuisine at three-Michelin-star restaurant Alinea, posted a tiny slice of his creation on his Instagram account, hashtagging the post “#surrealism.” The slice definitely looks surreal, since you can perfectly see the crust and a dollop of whipped cream — but no “pie.”

“It is a distillation of pumpkin, cinnamon, ginger, and clove,”Davies wrote in a comment on his post. “Texture is very important to us. This melts away.”

The machine that makes the gel pie, called the “rotovap”, creates a clear liquid that tastes like whatever food you want (so in this case, pumpkin pie).

Our minds are honestly blown. The pie looks like Jell-O, but it melts in your mouth, and it apparently tastes just like pumpkin pie?! Sign us up for this freakishly cool dessert.
