Molten Chocolate Lava Cake – decadent, indulgent and rich chocolate dessert with light crispy crust and glorious ooey, gooey melt-in-the-middle chocolate centre. You can prepare this dessert ahead of time, chill it in the fridge and then pop in the oven just before serving . 4 x 6 oz ramekins, greased with baking spray 100g dark chocolate 100g unsalted butter A pinch of salt
100g light brown sugar 2 eggs and 2 yolks 1/2 tsp vanilla extract 100g plain flour Icing sugar, for dusting Ice cream and berries, for topping . 1.Place the greased ramekins in the fridge while preparing the cake batter . 2.Pour some water into a small saucepan. Put the chocolate, butter and a pinch of salt in a bowl then place the bowl on top of the pan, making sure it does not touch the water. Bring water to simmer to gently melt the butter and chocolate. Remove from heat and leave the mixture to cool for about 10 mins . 3.Whisk the eggs, yolks, sugar and vanilla extract together until thick and frothy. Add in the flour, mix until well combined. Pour in the melted chocolate into the egg mixture and mix until combined .
4.Divide the batter evenly between the ramekins. Transfer to the fridge and chill for at least 30 mins . 5.Heat oven to 180C (fan). Place the ramekins on a baking tray and bake for 10-12 mins. You want to remove the cakes from the oven when the tops have just formed a crust, the edges are slightly firm and starting to come away from the sides and the centre just a little soft . 6.Remove ramekins from the oven and let cool for 1 min. Use a knife to gently loosen the edges then carefully invert the cake onto a serving plate.
