Caramel Latte Pie

Ingredients

  • 1 pre-made or homemade graham cracker crust
  • 1 jar of thick caramel (I love this brand), refrigerated
  • 1 tsp. sea salt
  • 3.5 ounces (or a standard bar) of dark chocolate, finely chopped
  • 1 tsp. vanilla
  • 16 ounces (or a pint) of heavy whipping cream, divided in half
  • 1 Tbsp. finely ground coffee beans
  • 1/4 cup strongly brewed coffee, chilled

Instructions

Take caramel out of the refrigerator and pour *almost* all of it into the graham cracker crust. Sprinkle sea salt on top and refrigerate.

In a medium-sized saucepan, heat up half of the whipping cream (about eight ounces) to a simmer, then remove from heat. In a heat-proof bowl, add the chocolate. Pour whipping cream over chocolate, add vanilla and whisk until smooth. Get the crust out from the refrigerator and pour chocolate mixture over the caramel. Refrigerate for an hour.

Meanwhile, make the coffee whipped cream. In a chilled bowl, add the rest of the whipping cream, coffee and ground coffee beans. Whip to a stiff peak, then add to the chilled pie. Smooth the top.

Refrigerate for four hours or overnight.

Using the remaining caramel, take a spoon to drizzle it on top of the pie for an *extra* yummy effect.

Enjoy!
