Banana bread donuts stuffed with @overthemoo caramel ice cream! Oh my yum. The recipe for the donuts are on my website and you can get allll of the ingredients from Woolies. We are driving back from Melbourne and I'm feeling so grateful for the experiences we had and I had in my workshops. I feel rejuvenated (well kinda) from endless games with the kids, grounded from chatting with my partner's mum and a human again from catching up with my uni friend. I loved loved loved doing the workshops and having unlimited vegan options in Melbourne. We are driving back to Canberra feeling energised from our holiday but also looking forward to being in our own sanctuary. I'm a little worried about my wrist/hand injuries and how they'll cope with the amount of work I have coming up. My wrists didn't get a break from cooking in Melbourne and are sore as ever now. I also realised that my wrists are as big as a 5 yr old male, which may be one reason why they've struggled with my workload. I should go to the physio again and get my wrist put in a splint. I don't want to be unable to use my hands at all in 5 years time. Anyway, I'm going to relax on the trip back and soak in the scenery xo

There's something about Asian food that always gets me like ๐Ÿคค Tonight's dinner: Soba stir fry & Chinese beetroot-sweet potato dumplings ๐Ÿ‘Œ Recipe for these BOMB Chinese dumplings will come probably tomorrow! Stir fry serves 2 100g soba noodles 1/2 zucchini, finely chopped 1 big carrot, funky chopped or roughly blended 4 broccoli florets, chopped 1 red bell pepper Optional: 100g firm tofu + 1 tbsp tamari, peanuts, sesame seeds Sauce: 3 1/2 tbsp tamari 100ml + 1 tbsp coconut milk 1 tbsp lime juice 1 tbsp peanut butter 1 small ginger knob, peeled Small garlic clove Method: Prepare soba noodles. While noodles are cooking, fry the vegetables over medium heat for roughly 5 minutes. Blend all the ingredients for the sauce and pour on top of vegetables. Stir and let simmer for 1-2 minutes. As soon as noodles are soft, add the the pan and stir until everything is covered with sauce and veggies. Cut the tofu into small pieces and in a clean pan, fry over medium heat until crispy. Turn off heat & add tamari while stirring well. Top the stir fry with crispy tofu, roasted peanuts and sesame seeds. Enjoy! xx #LoveFood

It looked like everyone at the cute toast party was having WAY too much fun without me (I'm looking at you @simplyalphonsine @tumblinbumblincrumblincookie) so I finally had a go myself ๐Ÿ˜๐Ÿž๐ŸŒŸ This is thickly sliced fruit toast with beetroot and cacao silken tofu mousse (I made the beet one too runny and had to add chia seeds to thicken it which is why it's a little lumpy ๐Ÿ™„). I was also surprised how good this combo tasted! There's something about crunchy toast with thick creamy mousse and sweet fruit that is really satisfying. So it's not just for aesthetics guys! (Even though let's be honest it's 99% for aesthetics coz who cuts their fruit into cute shapes without taking a photo of it ๐Ÿ˜‚)
