It doesn’t matter how old you are, tater tots are timeless. Your favorite vegetables all packed into one convenient tot? It’s hard to say no. Veggie tots make perfect appetizers and snacks, and you don’t need a lot of ingredients to make them. Just to prove how versatile tots can be, here are seven veggies that you can turn into adorable bite-sized snacks. Mix up a creamy dipping sauce to go with them and you’ll be good to go.

1. Butternut Squash

If you can shred it, you can make it into a veggie tot. Butternut squash can easily be shredded up and formed into tot shape. Here’s a recipe for butternut squash tots that involves squash, panko breadcrumbs and egg. You can pair your butternut squash tots with a refreshing Sriracha yogurt dipping saucesage aioli or avocado dipping sauce.

2. Sweet Potato

There aren’t too many things more comforting than a bowl of sweet potato tots. These tots are made with rosemary and sea salt. Try a creamy maple Greek yogurt dipping sauce or a garlic aioli. A creamy Sriracha yogurt sauce would also be just as good here. You could also try these crispy baked sweet potato tots with a maple cinnamon yogurt dip.

3. Cauliflower

People love cauliflower as a carb or protein substitute these days. Cauliflower steaks, cauliflower rice, and cauliflower pizza are all the rage so it’s only natural that cauliflower tots are an awesome snack. These five-ingredient cauliflower tots have diced onion, grated Parmesan, breadcrumbs and eggs. You can get pretty creative with whatever herbs you’re feeling or add in some chopped pepper and cheddar cheese. Try this creamy spinach parmesan dip on the side.

4. Broccoli

Why stick to broccoli in regular form when you can make it into tot form? These broccoli tots are made with red potatoes, egg, parmesan, almond meal, parsley, onion and a few other spices. Broccoli and cheddar are always a good duo. You could also try these broccoli tots with green onions.

5. Zucchini

Another vegetable that’s easy to grate and turn into tater tots is zucchini. These cheesy zucchini tots are made with eggs, panko bread crumbs, salt, pepper, garlic powder and cheddar cheese. You could make or buy a hearty marinara sauce for dipping. Grating zucchini won’t take you long at all and you’ll end up with enough tots to share with a bunch of friends.

6. Corn

For anyone who loves corn, you’ve probably had some form of corn nuggets in your life. Corn nuggets or corn tots (basically the same thing) are a comfort food that you’ll want to have under your belt. These creamy corn bites are so indulgent enough on their own, you probably won’t need a dipping sauce. You’ll also have to try these grilled corn elote-style tater tots. They’re made just like you’d make Mexican-style street corn: Smothered with chili powder, crumbled Cotija cheese, mayo, crema and cilantro. Don’t forget to squeeze some lime juice on top.

7. Beets

For a root vegetable that’ll add some color and body to these bite-sized snacks, buy some beets. These beet-packed tots are made with golden beets and potatoes and served with a spiced yogurt and avocado crema. For something with a little more protein, these beet hash tots are made with corned beef. Any kind of creamy yogurt sauce would work for dipping. Try mixing some dill or chives in there as well.
