3 Sweet Tofu Recipes That’ll Give You A Punch Of Protein
When you’re looking for a fast and cheap protein that’ll transform any dish into a vegetarian one, tofu comes in clutch. You might think of tofu mainly as a protein substitute in savory recipes, but it works just as well in sweet ones. 1. Peach Cobbler Parfait
Ingredients
For the filling:
1 package medium firm tofu
1 cup coconut cream
¼ cup maple syrup
1 teaspoon vanilla extract
For the crumble:
½ rolled oats
¼ cup pecans
¼ cup maple syrup
¼ teaspoon cinnamon
2 tablespoon coconut oil, melted
1 teaspoon salt
For the garnish:
Peaches, sliced
Honey, optional
Directions
Toss rolled oats and pecans with maple syrup, cinnamon, melted coconut oil and salt. Spread mixture out on a parchment-lined baking sheet and bake for 10 – 12 minutes, or until golden brown. Allow to cool. In a blender, combine tofu, coconut cream, maple syrup and vanilla extract until smooth and creamy.
In bowls or mason jars, layer sliced peaches with tofu cream and crumble. Drizzle with honey, if desired. Refrigerate until ready to eat.
2. Strawberry Tofu Cheesecake
Ingredients
For the crust:
1½ cups graham crackers crumbs
7 tablespoon coconut oil, melted
For the filling:
1 package soft tofu
8 ounces of cream cheese, softened
1 cup strawberries, pureed
½ cup sugar
Strawberries, for garnish
Directions
In a bowl, mix graham crackers and melted coconut oil until combined. Pour mixture into pie crust and bake in the oven for 10 minutes or until golden brown. Set aside the crust to cool. Let the tofu sit out while preparing the crust. Drain excess liquid. In a food processor, blend soft tofu, strawberries, sugar and cream cheese together. Pour filling into cooled piecrust.
Chill in the refrigerator for at least 4 hours. Top with strawberries for garnish before serving.
3. Acai Tofu Smoothie Bowl
Ingredients
½ package soft tofu
2 packs Superberries acai pack
1 cup frozen strawberries
½ ripe banana
½ cup orange juice
Drizzle of honey
Toppings of choice
Directions
Place the packet of acai under hot water, according to package directions, to slightly defrost. In a blender, place acai, tofu, strawberry, banana and juice and blend until thick and smooth. Transfer to a bowl. Drizzle with honey. Top with granola, banana, fresh berries or whatever else you’re in the mood for.
