Ingredients

  • 1 pound of fresh green beans, rinsed, trimmed and halved
  • 2 tablespoons of butter
  • 1 cup of mushrooms, chopped into 1/2-inch pieces
  • 2 tablespoons of flour
  • 1 cup of heavy cream
  • 1 cup of chicken or turkey broth
  • 2 teaspoons of garlic, finely minced
  • 1 teaspoon of salt, plus more to taste
  • Pepper to taste
  • 1 can of French fried onions

Instructions

Preheat your oven to 400 degrees Fahrenheit and coat a medium-sized baking dish with oil or butter. Fill a large pot with water and bring it to a boil. Add the green beans and a teaspoon of salt, and cook them for about 5 minutes. Then immediately plunge the green beans into a bowl of ice water. Set them aside.

Drain the large pot and put it back on medium-high heat. Add the butter and mushrooms and cook them for about 5 minutes, or until the mushrooms are tender. Then add the flour and stir, making sure all mushrooms are covered. Pour in the heavy cream, broth, garlic, salt and pepper, and cook the mixture for another 10 minutes or until it’s thick and bubbly. Add the green beans and toss until everything is fully incorporated. Then pour the entire mixture into the baking dish and top it with French fried onions. Bake, uncovered, for 20 minutes, or until it’s golden brown and bubbly.
