Recipe Of The Day: Sheet pan dinners are a fave among the Swirled team — they make dinner a cinch and cleanup is a breeze. One of my faves, roasted chicken and tomatoes is no exception. Season bone-in chicken leg quarters with olive oil, herbs (fresh if you have them), salt and pepper. Once coated add a bunch of yellow cherry tomatoes. Bake at 450 degrees for 45 minutes or until the chicken is golden brown and cooked through. [The Daily Meal]
A quick tip from yours truly: Replace the yellow cherry tomatoes with any type of tomato you can find. Not a tomato fan? Swap for rounds of zucchini or yellow squash.
