This One-Skillet Brown Butter Banana Bread Can Do No Wrong
We’re gonna go out on a limb and say banana bread speaks a universal language. With a bunch of sweet, ripe bananas, walnuts and the right spices, banana bread is easily one of the most likable desserts. Since we’re always on the lookout for easier and elevated versions of our favorite recipes, we thought you should know about this one-skillet banana bread recipe. The cast iron skillet will give you more control over what you’re baking and it’ll give you a better overall texture once it’s cooked. We’re officially hooked on this recipe.
One-Skillet Brown Butter Banana Bread
Ingredients
- 1/2 cup (1 stick) plus 2 Tbsp. unsalted butter
- 1 cup lightly packed brown sugar (or dark brown sugar)
- 2 large eggs
- 2 tsp. pure vanilla extract
- 2 ripe bananas, mashed
- 3/4 cup walnuts, chopped
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 2 cups all-purpose flour
- 3/4 tsp. baking soda
- 1/2 tsp. salt
Instructions
First things first, preheat your oven to 35o degrees Fahrenheit. On a low heat, melt the butter in your cast iron pan (we usually use a nine or a ten-inch cast iron). Once the butter begins to bubble and slightly turn brown, remove the pan from the heat.
Whisk in the brown sugar until the butter and sugar are fully combined. Let this mixture cool for about three minutes or so. Whisk in the eggs one at a time until the butter, sugar and eggs are fully combined. Pour in the vanilla, mashed bananas, cinnamon, nutmeg and nuts and mix until everything looks evenly distributed.
In a separate bowl, mix together the flour, baking soda and salt. Combine the dry ingredients into the wet ingredients and give everything a good mix. If you need to, scrape the batter down from the sides of the cast iron take advantage of your spatula.
Pop the banana bread into the oven for about 20 to 25 minutes. You want it to be cooked on top and still a little soft at the center. Remove the pan from the heat and let it cool for about 15 minutes. Sprinkle a little extra cinnamon on top and you’re ready to eat.
