Recipe Of The Day: These incredibly addictive watermelon rind pickles start with the rind. Peel away the green skin and cut into cube, set aside. Boil together apple cider vinegar, water, sugar, candied ginger, salt red pepper flakes, allspice and star anise and add the watermelon. Return to a boil, remove the pan from the heat and let the pickles sit for 30 minutes. Add to a glass jar, cover and leave at room temperature for an additional hour and a half. Refrigerate overnight and eat within a month. [Alton Brown]
